East Coast Potted Crab- A Grimsby Recipe
½ lb Mixed white and brown crab meat
3 Eggs yolks
2tblspns Cream
3 oz Butter
Lemon juice from 1 lemon
Cayenne and pepper to taste
1tblspn Parmesan cheese
Pinch of salt
Method:
Mix ingredients together and stir over a slow heat, until thick but not boiling. Season well with pepper, cayenne, lemon juice and salt. Stir in Parmesan cheese place into small dishes and chill well.
